Hue grilled pork in lemongrass skewers are made of finely grounded marinated pork, plus shredded pork skin and fat, formed into sausages around stalks of lemongrass and grilled over charcoal. This is served with rice papers (for wrapping around the meat), to which you add sliced lettuce, cucumbers and local fig, lightly pickled strings of carrot and green papaya and a pile of herbs. One more thing that cannot be missed from this specialty is the special local sauce made from peanuts.
